Garlic Scallion Noodles

Ingredients

  • 3-4 packages ramen noodles or instant noodles or use pasta noodles, udon noodles, yakisoba noodles, etc. Whatever you want.
  • 6 tbsp peanut or vegetable oil
  • 4-5 stalks scallions sliced
  • ½ tsp salt
  • 2 tbsp minced garlic 
  • 1 tbsp soy sauce low sodium
  • 2 tbsp oyster sauce

  1. Bring a pot of water to a boil and cook your ramen noodles 1 minute under the instructions on the package. Mine cooks in 4 minutes so I cook it to 3 minutes. Drain and set aside.
  2. Add oil into a skillet or a wok on medium-high heat. Once the oil is hot (slightly shimmer-y) add in the green onions. Stir the green onions in the oil until the colour has changed and they start looking toasty.
  3. Add in a pinch of salt.
  4. Add in minced garlic and continue to stir until the green onions and garlic are fragrant.
  5. Add in the cooked ramen noodles.
  6. Add in the soy sauce and oyster sauce.
  7. Toss to coat the noodles evenly with the garlic scallion oil.
  8. Serve with more green onions as a garnish if desired.
