Ingredients

  • 2 soba noodles 8-ounce packages
  • 5 garlic large cloves, minced
  • 1 Tablespoon ginger freshly grated
  • 1 Tablespoon sesame oil
  • ⅓ cup soy sauce
  • ¼ teaspoon chili paste or to taste
  • yu choy or a green veggie of choice like broccolini or bok choy, chopped
  • green onion sliced
  • sesame seeds for garnish

Instructions

  1. Cook soba noodles according to package instructions.
  2. In a standard-size bowl, whisk together the garlic, ginger, sesame oil, soy sauce, and chili paste.
  3. In a large pot or saucepan, add yu choy (or vegetable of choice) to wilt slightly. Then add cooked noodles to this pan along with sauce and green onions. Cook about 1 minute, mixing together all elements.
  4. Top with sesame seeds.

Notes

  • To increase spiciness, add red pepper flakes or chili oil for chili garlic noodles.
  • A small splash of lemon, lime juice, or rice wine vinegar adds brightness and depth.
  • A pinch of sugar or maple syrup can balance flavors when acid is added.
  • Add protein like crispy tofu, tempeh, or chicken strips to boost protein content.
  • For creamier sauce, stir in tahini or peanut butter.
  • Shredded nori can be used as a garnish for added flavor when available.
