Garlic Shrimp Pasta (Shrimp Scampi Recipe)

A quick and delicious garlic shrimp pasta recipe that is ready in the time it takes to cook pasta!

Ingredients

  • 1 lb raw shrimp (good quality fresh or frozen- shelled, deveined, cleaned with the tail left on)
  • 2 Tbsp extra virgin olive oil
  • 3 Tbsp butter (good quality, like Kerrygold)
  • 4 cloves garlic (minced)
  • 1 Tbsp parsley (finely chopped, fresh is best, if not use frozen or ½ tsp of dried)
  • ⅛ tsp salt (to taste)
  • ⅛ tsp pepper (to taste)
  • 1 Tbsp white wine (a dash, or water from the cooked pasta)
  • 1 lb Spaghetti

Instructions

  1. Cook the spaghetti as directed on the box. While it is simmering, make the shrimp and sauce.
  2. Rinse, then dry the shrimp in paper towel.
  3. Place the olive oil and 1 Tbsp of the butter in a sauté pan over medium-high heat. Add the minced garlic and cook for about 2 minutes, then add the parsley.
  4. Turn the heat up, then add the shrimp.
  5. The shrimp will only need to cook for about 4 or 5 minutes, so as soon as they turn pink, turn them over and make sure they are evenly cooked. Season with a little salt and pepper.
  6. Add a little white wine (or water from the pasta that’s cooking), and the other 2 Tbsp of butter.
  7. Stir well and remove from heat. Cover to keep warm until the pasta is ready.
  8. Drain the pasta and place in a bowl with the shrimp and sauce added on top. Stir to coat the pasta.
  9. Serve immediately.

Notes

  • Omit the garlic if you don't like it or are allergic.
  • Choose a different pasta shape if you like.
