Ingredients
- 1 pound Shrimp peeled and deveined
- ¼ cup soy sauce
- 3 cloves garlic minced
- 3 tablespoons brown sugar
- 1 teaspoon sesame oil
- 1 red bell pepper sliced
- ½ cup carrot shredded
- ¾ cup chicken broth
- 1 teaspoon cornstarch
- 2 cups broccoli florets
- 1 cup sugar snap peas
- green onion sliced
Instructions
- In a small bowl, whisk together the ¼ cup soy sauce, 3 cloves minced garlic, 3 tablespoons brown sugar, and 1 teaspoon sesame oil. set aside.
- In a medium-sized skillet, over medium-high heat, add the 1 pound peeled and deveined shrimp, 1 sliced red bell pepper, and ½ cup shredded carrots and pour the sauce mixture on top. Cook for about 2-3 minutes or until the shrimp is pink.
- Whisk the ¾ cup chicken broth and 1 teaspoon cornstarch in a small bowl and add it to the skillet with the 2 cups broccoli florets and 1 cup sugar snap peas.
- Stir until incorporated and then cover and cook 3-5 minutes or until broccoli is tender and the sauce has thickened. Serve with sliced green onions and serve over rice if desired.
