Garlic spaghetti (spaghetti aglio e olio)

This simple garlic spaghetti recipe is the example of how with a handful of everyday ingredients you can make delicious pasta.

Ingredients

  • 1 lb Spaghetti
  • 6 cloves garlic chopped
  • 1/3 cup extra virgin olive oil
  • 1 tsp red pepper flakes adjust to taste
  • 1 bunch fresh parsley chopped
  • salt to taste
  • 1/2 cup grated Parmesan cheese

  1. Chop the garlic and parsley.
  2. Bring a large pot of water to a boil. Add the spaghetti and cook al dente, two to three minutes before the time indicated on the package.
  3. In a large skillet, heat olive oil,  minced garlic and red pepper flakes over medium-low and cook until garlic is lightly golden. Reduce heat and add 2 ladles of pasta water.
  4. Add al dente spaghetti to the skillet and toss with sauce. If dry, add pasta water to create a silky sauce.
  5. Remove from heat. Sprinkle with chopped parsley and mix well.
  6. Serve hot, topped with Parmesan if desired.
