Gemblong
Gemblong is a Jajanan Pasar from Indonesia that is made of glutinous rice flour and coconut with the brown sugar coating. It's crunchy on the outside and soft and chewy on the inside. It's simply a delectable sweet treat.

Ingredients
- 9 ounces glutinous rice flour.
- 2 ounces rice flour.
- 3.5 ounces desiccated coconut.
- 2 tablespoons slaked lime water.
- 1 ¼ cups water. Add 1-2 tablespoons if the dough is too dry.
- ½ teaspoon salt.
- 3 ounces palm sugar/ soft dark brown sugar/ dark muscovado sugar.
- Cooking oil for frying.
Instructions
- Mix the glutinous rice flour, rice flour, desiccated coconut and salt in a mixing bowl.
- Add in the slaked lime water.
- Then put in the water. Mix thoroughly and knead until you get a smooth and not-sticky dough.
- Take a tablespoon of the dough, shape it in a cylinder shape and flatten it into approximately 0.4-inch/ 1cm thickness.
- Heat the oil in a frying pan and carefully fry the Gemblong at low-medium heat until it is light golden yellow in colour.
- In another pan, put the sugar and ¼ cup/ 60 ml/ 2.11 fl.oz of water. Cook it until the sugar dissolves and bubbles.
- When the sugar was thick and slightly caramelized, put the fried Gemblong in and stir until all is well coated with sugar.
