Genmaicha

Genmaicha, literally "brown rice tea", is a Japanese green tea mixed with roasted rice grains, very popular in Japan.

Ingredients

  • 8 oz. Japanese short-grain white rice
  • japanese green tea loose leaf
Equipment
  • baking sheet
  • parchment paper
  • Glass container
  • Tea ball

Instructions

  1. Pour the rice into a bowl and cover generously with lukewarm water at 97 F (36°C).
  2. Let it soak for 30 minutes, drain it and cook it by absorption according to the instructions on its packaging, either in a rice cooker or in a Dutch oven.
  3. Spread the steamed rice grains in a thin layer on a baking sheet lined with parchment paper and let them cool completely.
  4. Heat a nonstick skillet over medium heat.
  5. Add the cooled rice in batches to allow it to brown evenly and grill until browned and puffed.
  6. Once the rice has completely cooled, weigh it and mix it with an equal amount of loose green tea leaves.
  7. Store it in a glass container with an airtight seal.
  8. To enjoy a drink, place 1 or 2 tablespoons of genmaicha in a tea ball or teapot fitted with a strainer and let steep for 2 minutes.
  9. Decant the tea into a preheated teacup to serve.
