German Pancakes

Baked to bliss, these "Dutch babies" are the perfect balance of sweet and spongy!

Ingredients

  • 8 large eggs
  • 1 1/3 cup milk
  • 1 1/3 cup all-purpose flour
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1/3 cup unsalted butter cubed
  • powdered sugar for garnish
  • Fresh mixed berries for serving

Instructions

  1. Set oven to 425F. Place butter cubes in a 9x13-inch baking dish and put the dish inside your oven while it preheats to melt the butter.
  2. In a large blender, combine the eggs, milk, flour, salt, and vanilla extract and blend until there are no lumps.
  3. Remove the dish from the oven and spread the butter to coat the bottom of it. Pour the batter into the baking dish over the butter.
  4. Bake in the preheated oven for 20-25 minutes, or until puffy on the edges and baked through.
  5. Top with a dusting of powdered sugar and your preferred fruit when serving.
