German Potato Salad with Mayonnaise

Creamy potatoes, fresh cucumber, and crunchy onion—this German potato salad is our favourite and always a top choice at parties.

Ingredients

Potato Salad
  • 500 g waxy potatoes for jacket potatoes!
  • 1 tbsp salt
  • 1 fresh cucumber peeled, finely sliced
  • 1 tsp salt
  • 1/2 onions yellow
Dressing
  • 100 g mayonnaise
  • 3 tbsp mustard
  • 1 tbsp white vinegar optional
  • 1 tsp marjoram
  • 1-2 tsp salt
  • pepper
Serving Suggestion
  • fresh chives, parsley or dill
  • 2 pair Frankfurt Sausage (4 sausages)

Instructions

Cook the potatoes

  1. Depending on their size, cook the jacket potatoes in salty, boiling water until done but not overcooked. They should be soft but not mushy. Suggested cooking times:For small potatoes - 15min, Medium - 18 min And large - 20 minutes.
  2. Place slices of the cucumber in a small bowl and add 1 tsp salt. Stir it and set aside for 30 minutes. 
  3. Chop the onions.
  4. At this point, the potatoes should be ready. Drain the potatoes and let them cool down a bit before you start peeling them.
  5. Remove excess water from the cucumber.
Prepare the dressing:
  1. Mix mayonnaise, mustard, white wine vinegar, marjoram, salt and pepper to prepare the dressing.
Make the salad
  1. Peel the potatoes and cut them into thin slices.
  2. Combine cucumber, onion, potato slices and dressing; mix well.
  3. Set aside for at least 30 minutes. Correct seasoning if you need it.
