Get the Recipe 10-Minute Instant Pot Cilantro Lime Rice

Making rice in the Instant Pot is basically foolproof - it is so easy to do and results in the perfect rice every time. Toss it with freshly squeezed lime juice and cilantro for a flavorful side dish that pairs with many dishes, from tacos to burrito bowls to curry.

Ingredients

  • 2 cups jasmine or basmati rice or white long grain
  • 2 cups vegetable broth or water
  • 1 Tablespoon butter optional
  • 1 lime zested and juiced (~2 TBSP)
  • 1 teaspoon kosher salt or to taste
  • ½ cup cilantro chopped

  1. Rinse the rice in a fine-mesh strainer until the water runs clear. Optional but recommended.
  2. In the bowl of your Instant Pot, add the rinsed rice and combine with water, butter, and salt. Cover and set to sealing.
  3. Cook on high pressure for 3 minutes for perfectly al dente rice (or 4 minutes for more well-done rice). Allow it to naturally release for 10 minutes, then release any remaining pressure. Fluff the rice with a fork and stir in lime juice, lime zest, and cilantro.
  4. Serve immediately with your favorite dishes!

Notes

  • Freezing: cool the rice, then store in a freezer-safe container like a Stasher bag or Souper Cube for easy storage. Thaw in the fridge or microwave.
