This super easy Mexican-inspired Elote Corn Dip is made with frozen corn so it comes together quickly - under 5 minutes - and is packed with flavor! It's perfect to make ahead and serve at BBQs and potlucks or on Taco Tuesday!

Ingredients

  • 2 2 cups frozen fire roasted corn thawed
  • ¼ ¼ cup mayonnaise
  • 2 2 teaspoons scallion white and light green parts, finely chopped (reserve tops for garnish)
  • 1-2 1-2 garlic cloves minced
  • ¼ ¼ teaspoon chili powder more to taste and garnish
  • ½ ½ lime juiced, more to taste
  • 2 2 Tablespoons cilantro finely chopped
  • 2 2 Tablespoons crumbled cotija cheese or grated parmesan
  • salt and pepper to taste

Instructions

  1. Thaw the frozen corn according to package directions, or by placing it in a bowl of water or in the microwave in 30-second intervals. Drain, if in water.
  2. In a medium bowl, whisk together the rest of the ingredients until combined, then stir in the thawed corn until coated. Taste test for salt and spice levels, adjusting as needed.
  3. Serve with tortilla chips or in cups and enjoy! Store leftovers in an airtight container in the fridge for up to 4 days.

Notes

  • Make ahead up to a day in advance and store in the fridge until you're ready to serve.
  • Store leftovers in the fridge in an airtight container for up to 4 days. This dip does not freeze well, but the good news is that there are so many ways to repurpose leftovers throughout the week!
