Ingredients

DRESSING:
  • 1 lime zested
  • 1/4 /4 cup lime juice freshly squeezed, approximately 2 limes
  • 2 garlic cloves minced
  • 1 Tablespoon shallot finely chopped
  • 2 Tablespoons honey
  • 1/4 /4 cup olive oil
  • salt and pepper to taste

Instructions

  1. Whisk together lime zest, lime juice, garlic, shallot, and honey in a medium bowl or mason jar.
  2. Slowly pour in olive oil while whisking until all ingredients are combined. Salt and pepper to taste.
  3. Store in an airtight container in the fridge. The oil will likely solidify; bring to room temperature before using again.
