Ingredients

  • 15 ounce canned artichoke hearts drained
  • 3-6 green olives pitted
  • 1 clove garlic
  • 1/2 /2 Tablespoon fresh lemon juice
  • salt and pepper to taste
  • 1/2 /2 Tablespoon olive oil

Instructions

    Cup of Yum
  1. Add all ingredients except the olive oil, to a food processor and pulse until combined. If the olive variety is really tart/briny, I recommend starting with 3 olives and adding additional as needed. When using Castelvetrano Olives, I add 6.
  2. Slowly pulse in olive oil, adding additional olive oil as needed to reach desired consistency. Taste test for desired salt level and adjust as needed. 
  3. Serve with baguette, crostini, crackers, or veggies.
