Ingredients
- 1 1 baguette sliced
- olive oil salt, and pepper for crostini
- 8 8 oz. burrata cheese
- salt flakes
- freshly ground black pepper
- 6 6 oz. blackberries large ones halved
- 1/4 1/4 cup mint chopped
- 1 1 lemon juiced
- 2 2 teaspoons olive oil
- honey for drizzle
Instructions
- Pre-heat oven to 375°F. Lay out baguette slices on a baking sheet. Drizzle with olive oil (don’t drench them, dry areas are ok). Sprinkle with salt and pepper. Flip slices over and repeat. Toast in oven for 10-12 minutes, flipping halfway through. Watch carefully so they don’t burn.
- In a small bowl, mix together mint, lemon, olive oil, and a pinch of salt as needed.
- Layer the following on top of each crostini: 1-2 Tablespoons burrata, freshly ground black pepper, pinch of salt flakes 3-4 blackberries, drizzle of mint mixture, and a drizzle of honey. Top with additional mint leaves or salt flakes as desired.

Notes
- Crostini can be made a few hours or a day ahead - just store in an airtight container until ready to serve. You may need to reheat in the oven to crisp up if making the day before.
