Ingredients

  • 3 cod fillets
  • 3 tbsp melted butter
  • ½ tsp garlic powder
  • ½ tsp paprika
  • ½ tsp black pepper
  • pinch sea salt
  • squeeze lemon juice
  • fresh parsley to garnish

Instructions

    Cup of Yum
  1. First, preheat oven to 400 degrees Fahrenheit. Spray a pan with nonstick spray.
  2. In a bowl, combine melted butter, garlic powder, paprika, pepper and salt.
  3. Pat fish dry. Place in greased pan.
  4. Then, pour melted butter mixture over fish.
  5. Bake for 10 to 12 minutes or until fish is flaky and opaque. Insert fork into fish. Twist. If the fish flakes, it is done.
  6. Finally, remove from oven. Add a squeeze of lemon juice and fresh herbs on top.

Notes

  • Use fresh fish or thawed frozen cod.
  • Feel free to adjust the seasonings to suit your taste.
  • For a more mild flavor, consider omitting the paprika.
  • To make this dairy free, replace melted butter with 1 tablespoon olive oil.
  • Bake until opaque.
  • To test if the fish is done, insert fork and twist.  If the fish easily flakes, remove from oven.
  • Store leftovers in the fridge for up to 3 days.
