Love ice cream but want something healthy and high in protein? This cottage cheese ice cream is creamy, full of protein, and keeps you full. Make any flavor you like, right at home in minutes!

Ingredients
- 16 ounces cottage cheese
- ⅓ cup honey or date syrup
- 1 tsp vanilla extract
- ½ tsp sea salt
- 5 pitted dates
Instructions
- First, add the cottage cheese, honey, vanilla, and sea salt to a blender or food processor.
- Blend until smooth and creamy. If needed, use a spatula to scrape down the sides of your blender.
- Then, add in the pitted dates. Blend until the dates are still a little chunky.
- Transfer this mixture to a larger bowl or bread pan. Add a honey drizzle on top if desired. Freeze for at least one hour for soft serve, or 4 hours for thicker ice cream.
- Finally, remove from the freezer. Scoop and serve!

Notes
- For the creamiest ice cream, use full fat cottage cheese.
- If desired, replace the honey with pure maple syrup or date syrup.
- Blend the dates until they are mostly broken up, but still a little chunky.
- For soft serve, freeze for one hour.
- For more traditional ice cream, freeze for up to 4 hours.
- Store covered in the freezer for up to 2 weeks.
