Ingredients

  • 4 cups shredded cabbage about 1 large green cabbage and 1/4 cup purple cabbage
  • ¼ cup shredded carrot
  • ½ cup Whole30 mayonnaise
  • ½ tsp ground mustard
  • 1 tbsp apple cider vinegar
  • ½ tsp ground pepper
  • pinch sea salt optional
  • green onions chopped
  • queeze lemon juice optional

Instructions

    Cup of Yum
  1. First, add all ingredients to a mixing bowl. Stir until everything is coated in mayonnaise.
  2. Garnish with extra chopped green onions. Add a squeeze of lemon juice if desired.
  3. Lastly, serve!

Notes

  • If using a bagged coleslaw mix, use only vegetables (NOT the dressing that typically comes with it).
  • Store leftovers in an airtight container in the fridge for up to 3 days.
  • My favorite Whole30 approved mayonnaise is from Primal Kitchen Foods.
