Ingredients

  • 1 large head of cauliflower about 4 cups
  • 1 can coconut cream about 14 ounces
  • 2 tbsp ghee or grass fed butter
  • 1/2 tsp chopped basil optional

Instructions

  1. First, chop head of cauliflower into florets.
  2. Then, add florets to a food processor. Process until cauliflower resembles cauliflower rice.
  3. Add riced cauliflower, ghee, and coconut cream to a skillet over medium heat. Cook for 7 to 8 minutes, or until coconut cream has been absorbed.
  4. Carefully pour back into the food processor. Process until smooth and creamy.
  5. Then, serve. Garnish with chopped basil and additional ghee or butter if desired.

Notes

  • Grass fed butter can replace ghee.
  • Fully blend mixture until smooth and creamy.
  • Store leftovers in the fridge for up to 3 days.
