Ingredients

  • 1 1 pint cherry tomatoes
  • 4-6 4-6 garlic cloves minced
  • 3 3 Tablespoon extra virgin olive oil
  • 1/2 1/2 tsp kosher salt or to taste
  • Optional: pinch of red pepper flakes

Instructions

    Cup of Yum
  1. Preheat oven to 350°F. Add all the ingredients to a baking dish and stir to combine.
  2. Bake for 20 minutes. Carefully poke or smash any cherry tomatoes that have not burst. Stir sauce together and return to the oven to bake for an additional 5 minutes.
  3. Carefully taste test to adjust salt levels as needed. If making with pasta, add 2-4 TBSP of pasta water to the sauce to loosen, and toss with spaghetti.

Notes

  • Grape tomatoes can be used in place of cherry tomatoes.
  • Serving Size: as written, this recipe makes enough sauce for about 2 servings. Easily double the recipe for more sauce.
  • If making spaghetti, boil 8 oz. of spaghetti noodles according to package directions for two servings.
  • Adaptions: add in thyme, rosemary, or oregano to roast. Top with fresh basil or parmesan cheese.
