Ingredients

  • 4 lamb lollipops about 1 inch thick
  • ½ tsp sea salt
  • ½ tsp black pepper
  • 3 tbsp olive oil
  • 2 tbsp minced garlic 
  • 2 prigs fresh Rosemary chopped

Instructions

  1. First, season lamb chops all over with sea salt and pepper.
  2. In a small bowl, combine olive oil, minced garlic and chopped rosemary.
  3. Pour this mixture all over lamb chops. Cover and place in fridge for at least 1 hour to marinate.
  4. Preheat large skillet to medium heat. Add a drizzle of olive oil to the pan. Once oil is hot, place lamb chops in pan.
  5. Sear for 2 to 3 minutes. Then carefully flip and sear another 2 minutes.
  6. Finally, remove from pan. Serve with fresh rosemary if desired.

Notes

  • Ask your butcher for pre-cut lamb lollipops.  This is much easier than cutting up a whole rack of lamb.
  • This cooking time is for 1 inch thick lamb.  You may need to cook it slightly longer.
  • The chops are rare at 120 degrees Fahrenheit, medium rare at 125 degrees Fahrenheit, medium at 130 degrees Fahrenheit, and well done at 145 degrees Fahrenheit and over.
  • Use a meat thermometer to measure internal tempeature.
  • Store in the fridge for up to 4 days.
