Ingredients

  • 4 large chicken breasts
  • 2 tbsp olive oil
  • 1 tbsp minced garlic 
  • 1 tsp onion powder
  • 1 tsp ground pepper
  • 2 cans 15 ounce Del Monte Apricot Halves
  • 1 cup chicken broth
  • fresh thyme to garnish

Instructions

  1. First, heat a large skillet over medium heat and add in olive oil. Pound each chicken breast between two sheets of parchment paper until 1/2 inch thick.
  2. Then, season chicken with onion powder and ground pepper. Place each chicken breast in the skillet.
  3. Next, cook for 2 to 3 minutes on each side.
  4. Turn heat to low and add 1 can Del Monte Apricot halves (just included) and chicken broth to the pan.
  5. Add the second can of apricot halves (juice included) to a blender and blend until smooth.
  6. Pour this blended mixture into the pan. Simmer for 10 to 15 minutes or until chicken is cooked through (at least 165 degrees Fahrenheit).
  7. Serve over cooked cauliflower rice and garnish with fresh thyme if desired.
