Get the Recipe Small Batch Peanut Butter Brownie Skillet

Rich, fudgy brownies and peanut butter chips are a match your tastebuds won't be able to resist! This decadent one-bowl recipe is ready in under 20 minutes and it's made in a mini cast-iron skillet, the perfect serving size for two (but you don't have to share!).

Ingredients

  • 1 egg 60g
  • 7 Tablespoon granulated sugar 110g
  • 3 Tablespoon neutral oil (like vegetable or canola) 35g
  • 6 Tablespoon  all-purpose flour 55g
  • 3 Tablespoon unsweetened cocoa powder 20g
  • ¼ tsp fine salt
  • ½ cup peanut butter chips 80g
  • 2 Tablespoon semi-sweet chocolate chips optional

  1. Preheat the oven to 350°F. Lightly grease an 8-inch cast-iron skillet.
  2. In a mixing bowl, whisk together the egg and sugar for 1-2 minutes until light and pale yellow. Add in oil and whisk to combine.
  3. Gently fold in the remaining ingredients just until combined. The batter will be thick. Reserve a few chips to place on the top of the batter if desired. Spread evenly in the cast-iron skillet.
  4. Bake for 15-17 minutes until edges are set; the center will still be gooey. Let cool for 2-3 minutes then top with ice cream and serve (right out of the cast-iron) or let cool completely before slicing to serve.
