Ingredients
- 16 16 ounces whole milk cottage cheese
- 2 2 Tablespoons chives cut into 1 inch pieces
- 2 2 Tablespoons fresh parsley
- 8-10 8-10 basil leaves
- 1 1 Tablespoon fresh lemon juice
- ½ ½ teaspoon fine sea salt
- ⅛ ⅛ teaspoon freshly ground black pepper
- 1 1 Roma tomato diced, optional
Instructions
- Add all ingredients except for the tomato in the bowl of a food processor. Pulse together until smooth, scraping the sides as needed. Taste test salt and pepper levels.
- Transfer to a serving bowl. Garnish with additional fresh herbs and chopped tomato if using. Enjoy with crostini, crackers, and veggies.
