Ingredients

  • 16 16 ounces whole milk cottage cheese
  • 2 2 Tablespoons chives cut into 1 inch pieces
  • 2 2 Tablespoons fresh parsley
  • 8-10 8-10 basil leaves
  • 1 1 Tablespoon fresh lemon juice
  • ½ ½ teaspoon fine sea salt
  • ⅛ ⅛ teaspoon freshly ground black pepper
  • 1 1 Roma tomato diced, optional

Instructions

  1. Add all ingredients except for the tomato in the bowl of a food processor. Pulse together until smooth, scraping the sides as needed. Taste test salt and pepper levels.
  2. Transfer to a serving bowl. Garnish with additional fresh herbs and chopped tomato if using. Enjoy with crostini, crackers, and veggies.
