Gigi Hadid Spicy Vodka Pasta

Ingredients

Pasta
  • 8 c filtered water
  • 2 tbsp kosher salt
  • 2 c rigatoni
Sauce
  • ¼ c olive oil
  • ⅓ c shallots chopped
  • 2 cloves garlic chopped
  • ¼ c tomato paste
  • 1 tbsp vodka
  • ½ c heavy cream
  • 1 tsp red pepper flakes add more if you like it spicy
  • 1 tbsp unsalted butter
  • ¼ c grated parmesan plus more for topping
  • salt to taste
  • black pepper to taste
  • sliced basil for topping

Instructions

  1. In a large pot, combine water and salt and bring to a boil. Add the pasta and cook until slightly chewy or al dente. For rigatoni, it’s about 15 minutes. Reserve ¼ cup pasta water. Drain the rest of the pasta without rinsing.
  2. In a saute pan over medium heat, add the olive oil and shallots. Cook for one minute until softened.
  3. Add the chopped garlic and cook for an additional one minute until fragrant.
  4. Add the tomato paste and vodka. Stir until both are incorporated.
  5. Add the heavy cream and red pepper flakes and stir again.
  6. Add the pasta into the sauce, ¼ cup of reserved pasta water, butter, and parmesan. Stir to combine until butter is fully melted.
  7. Season with salt and pepper and taste test the sauce.
  8. To serve, sprinkle more parmesan and sliced basil.
