Ingredients

  • 1 tablespoons butter or oil
  • 1/2 cup shallot or leeks, chopped
  • 1 pound carrot peeled and cut into chunks (about 5-6 medium/large carrots
  • 1/4 cup candied ginger
  • 4 cups chicken stock or vegetable
  • 0-2 cups water to thin as needed
  • salt pepper to taste
  • parsley or chives, optional for garnish

Instructions

    Cup of Yum
  1. Melt the butter or heat oil in a heavy saucepan over medium heat. Stir in the chopped shallots and cook until soft but not brown.
  2. Add remaining ingredient, bring to a boil and cook until carrots are tender, about 25 minutes.
  3. Puree the soup, adding optional water if needed to thin. Taste and add salt and pepper to taste (with salted broth, more may not be needed)l 
  4. Serve warm garnished with chopped chives or parsley if desired.
