Ingredients

  • ⅔ cup granulated sugar
  • 2 large lemon zest and juice, plural
  • 2 tablespoons ginger freshly grated
  • ⅔ cup oil
  • 2 egg
  • ½ cup buttermilk
  • 2 tablespoons poppy seeds
  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • ¼ teaspoon baking soda
  • 1 pinch salt
For the glaze:
  • 1/2 cup confectioners sugar
  • 1 clementine zested
  • 2-3 tablespoons clementine fresh juice

Notes

  • Start checking the muffins for doneness after 15 - 16 minutes to avoid overbaking them.
  • You can absolutely make this ginger clementine lemon poppy seed muffins recipe entirely with lemon, skip the ginger, and glaze it with a simple lemon glaze.
  • Instead of the clementine glaze, you can use the glaze from this citrus poppy seed loaf with yogurt glaze.
