Ginger Scallion Sauce
Ginger Scallion Sauce blends finely minced fresh ginger and green onion with salt, combined with hot vegetable oil poured over the mixture to release flavors. The result is a fragrant, slightly spicy and savory sauce that brightens rice, noodles, and steamed dishes. The technique of pouring hot oil cooks and infuses the aromatics, yielding an intense fresh taste with a gentle warmth.
Ingredients
- 5 ticks green onion (4 oz)
- 8 lices ginger (medium thick, 2 oz)
- 1 teaspoon salt
- ½ cup vegetable oil
Instructions
- Peel and cut a piece of ginger (2 oz) into 8 slices. Put 8 slices of ginger (2 oz) into a chopper. Then, run the chopper until the ginger turns finely minced.
- Next, put finely minced ginger from step 1 into a bowl.
- After, cut 5 sticks of green onion (4 oz) into small pieces.
- The following step, put the chopped green onion from step 3 into the bowl and add 1 teaspoon of salt.
- After that, in a pan or pot heat up ½ cup of vegetable oil. Make sure the oil is hot enough before pouring over the ginger and green onion. (You can dip a wooden chopstick into the oil, if you little bubbles around the chopstick it means the oil is hot. Or, you can use a thermometer to measure the temperature around 400F.)
- Be careful when you pour the hot oil over the ginger and green onion. Then, mix it well.

- Select fresh green onions with vibrant green tops and firm ginger for best flavor.
- Minced ginger can be prepared efficiently using a chopper for a fine texture.
- Ensure oil temperature around 400°F; test by dipping a wooden chopstick and watching for small bubbles.
- Pour hot oil carefully over ginger and scallion to release flavor without burning.
