Gingerbread Animal Crackers

Gingerbread Animal Crackers are really the best of both words. They have that classic animal cracker look and texture, but with the sweetness and spice of a gingerbread cookie!

Ingredients

  • 1 1/2 cups all purpose flour
  • 1/2 cup old fashioned oats
  • 1 teaspoon baking powder
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon cinnamon
  • 1/8 teaspoon ground nutmeg
  • 1/2 cup brown sugar
  • 1/2 cup unsalted butter, chilled and cut into pieces
  • 2 tablespoons molasses
  • 1 teaspoon vanilla extract
  • 1 large egg

Instructions

  1. Place the first 8 ingredients in a food processor and pulse to combine.
  2. Add the butter and pulse to combine.
  3. Add the molasses, vanilla and egg and pulse until the dough forms into a ball.
  4. Wrap the dough in plastic wrap and chill in the fridge for 30 minutes.
  5. Preheat oven to 350 F.
  6. Roll out dough to 1/4 inch thick and cut out animal shapes.
  7. Place cut outs on a Silpat or parchment lined baking sheet.
  8. Bake for 12-15 minutes, or until the cookies are set and starting to turn golden brown on the edges.
