Ingredients

  • 12 tablespoons butter softened, unsalted
  • 1 1/2 cups dark brown sugar , packed
  • 2 large egg
  • 1/2 cup molasses
  • 2 1/2 cups flour
  • 1 tablespoon ground ginger
  • 2 teaspoons cinnamon
  • 1 teaspoon ground nutmeg
  • 1/2 teaspoon cloves ground
  • 1/2 teaspoon ground allspice
  • 1/2 teaspoon salt
  • 1 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1 cup coffee , room temperature

Instructions

  1. Preheat the oven to 350 degrees and spray a 10-cup Bundt pan with baking spray.
  2. Add butter and dark brown sugar to a stand mixer on medium speed until light and fluffy, about 2 minutes.
  3. Add in the eggs and molasses until smooth, about 20 seconds.
  4. Sift together flour, ginger, cinnamon, nutmeg, cloves, allspice, salt, baking powder, and baking soda into a large bowl.
  5. Add 1/2 of the flour mixture to the stand mixer on low speed, then add 1/2 cup of coffee.
  6. Add the remaining flour mixture, then the remaining coffee.
  7. Add the batter evenly to your Bundt pan and bake for 55-60 minutes or until a toothpick comes out clean (this will differ slightly depending on your Bundt pan).
  8. Let cool 20 minutes before removing from the bundt pan.
