Gingerbread Irish Mule

Ingredients
For Gingerbread Syrup
- 1 cup water
- 1 cup brown sugar
- 1 tablespoon molasses
- 2 inch ginger peeled and sliced, piece
- 3 cinnamon stick
- 1 nutmeg whole
- 2 teaspoons clove whole
- 2 teaspoons allspice whole
For Gingerbread Irish Mule
- 2 ounces whiskey
- 6 ounces ginger beer
- 1/2 ounce gingerbread syrup
Instructions
To make Gingerbread Syrup
- Combine all ingredients in a saucepan and bring to a simmer over medium high heat, stirring to dissolve the sugar.
- When mixture is simmering, reduce heat and simmer on low for 20 minutes. After 20 minutes, turn off heat and allow to steep for about an hour.
- Strain through a fine mesh sieve to remove solids, store in a sealed container in the fridge.
To make Gingerbread Irish Mule
- Fill a copper mug with ice. Add whiskey, ginger beer and gingerbread syrup. Gently stir to mix, garnish with candied ginger if desired.
