Gingerbread Pancakes

Ingredients

  • 220 g plain flour
  • 1 teaspoon baking powder
  • 3 tablespoon dark brown sugar
  • 2 teaspoon ground ginger
  • 1 teaspoon cinnamon
  • 1 teaspoon vanilla extract
  • 1 egg
  • 300 ml milk

Instructions

  1. In a large mixing bowl, add 220 g Plain flour, 3 tablespoon Dark brown sugar, 1 teaspoon Baking powder, 1 teaspoon Cinnamon and 2 teaspoon Ground ginger. Mix well.
  2. Add 300 ml Milk, 1 teaspoon Vanilla extract and 1 Egg to the dry ingredients.
  3. Whisk well to form a smooth batter.
  4. Heat a small amount of butter in a pan and add ladles of batter. Cook until small bubbles appear, about 2 minutes.
  5. Flip the pancakes over and cook for a further 1-2 minutes.

Notes

  • Do not over-mix your pancake batter, as the texture of the finished results just won't be right.
  • Every stove cooks differently, so if you find your pancakes are browning too quickly, then turn the heat down.
  • You could add a tablespoon of molasses if you wanted that more traditional gingerbread flavor.
