Gingerbread Truffles

These truffles made with gingerbread and white chocolate and flavored with extra cinnamon and ground ginger are an incredible Christmas treat

Ingredients

  • 300 g gingerbread (or cinnamon-flavored cookies)
  • ½ tsp ground cinnamon
  • 2 tsp ground ginger
  • 200 g cream cheese at room temperature
  • 300 g white chocolate finely chopped
For serving:
  • ground cinnamon

Instructions

  1. In a food processor, crush the gingerbread (or cinnamon cookies) until they turn into fine crumbs.
  2. In a bowl, combine the crushed cookies, cinnamon, ginger, and cream cheese. Mix thoroughly with your hands, wearing disposable gloves.
  3. Shape the mixture into balls of 20-25 g (~1 oz) each, place them on a plate, and freeze for 10 minutes.
  4. Melt the white chocolate using the double boiler method and let it cool slightly.
  5. Dip the frozen truffles into the melted chocolate. Carefully lift them with a fork and place them on a baking sheet lined with parchment paper.
  6. Once the chocolate has set, sprinkle the truffles with a bit of cinnamon and serve.
