Glazed Apple Cinnamon Muffins

Ingredients

  • Apple Muffins:
  • ½ cup brown sugar packed, divided
  • 1 tsp ground cinnamon divided
  • 1 apple peeled, cored, and diced into 1/8 inch cubes, small size
  • ¼ cup vegetable oil
  • ½ cup white sugar
  • ½ cup sour cream
  • 1 egg
  • 1 tsp vanilla
  • 1 ½ cups flour
  • 1 ½ tsp baking powder
  • ½ tsp ground cinnamon
  • ½ tsp nutmeg
  • ¼ tsp salt
  • Muffin Topping:
  • 3 tbsp butter diced, unsalted
  • ¼ cup white sugar
  • 2 tbsp flour
  • 1 ½ tsp ground cinnamon
  • GLAZE:
  • ½ cup powdered sugar
  • 1 tbsp milk

Instructions

  1. Make the muffins by combining 2 tablespoons of brown sugar together with 1/2 teaspoon of cinnamon and the diced apples; mix well then set aside.
  2. Using a hand mixer, beat together the oil, white sugar, and remaining brown sugar until well combined.
  3. Add the sour cream, egg, and vanilla; beat well until creamy.
  4. In a separate bowl, combine the flour together with the baking powder, cinnamon, nutmeg, and salt until well combined.
  5. Slowly add the flour mixture to the wet mixture until just combined. Add the cinnamon apples and liquid to the batter; stir to combine. Place into the refrigerator for 10-15 minutes.
  6. Preheat the oven to 425 degrees. Line a muffin tin with muffin liners.
  7. Prepare the topping while the batter is in the refrigerator and the oven is preheating, by combining the diced butter, white sugar, flour, and cinnamon together until crumbly.
  8. Spoon the batter evenly into the muffin liners (I only had enough batter for 11).
  9. Sprinkle the topping evenly over the muffins.
  10. Place the muffins into the oven and bake for 5 minutes. Without opening the oven door, lower the temperature to 375 degrees and continue to bake for 9-11 minutes, or until a tester inserted into the muffin comes out clean.
  11. Remove from the oven and allow to cool in the pan for a few minutes before moving to wire racks placed over parchment paper (for easier cleanup later after glazing).
  12. While the muffins are cooling make the glaze by combining the powdered sugar together with a bit of milk and mix until creamy and smooth. Drizzle the glaze on top of the cooled muffins. Serve and enjoy.
