Glazed Blood Orange & Poppy Seed Loaf Cake

Ingredients

For the batter:
  • 5 eggs
  • juice of 3 blood oranges
  • Zest of 1 blood orange
  • 200 g granulated sugar
  • 50 ml oil
  • 250 g flour
  • 10 g baking powder
  • 1 tbsp vanilla essence
  • 3 tbsp poppy seeds
For the glaze:
  • 250 g powdered sugar
  • juice of a blood orange
  • slices of blood oranges

Instructions

  1. Place all the ingredients for the cake batter in a large bowl and mix until you get a homogeneous and creamy mixture.
  2. Preheat the oven to 180 °C/356 °F and line a cake/loaf pan with parchment paper.
  3. Pour the mixture into the pan and bake for 40-45 minutes at 180 °C/356 °F or until the cake has a golden-brown crust and is firm to the touch.
  4. Let the cake cool completely and, in the meantime, prepare the glaze.
  5. In a bowl mix the powdered sugar and the blood orange juice.
  6. When the cake has cooled completely, pour the pink glaze over it.
  7. Garnish with fresh blood orange slices and enjoy.
