Ingredients
For Eggs
- 4 cups Fruity Pebbles cereal
- 2 1/2 cups mini marshmallows
- 2 tablespoons butter
- 2 teaspoons lemon zest
For Lemon Glaze
- 1 cup confectioners sugar sifted
- 2 tablespoons lemon juice
Instructions
For Eggs
- Place cereal in a large bowl
- In a saucepan, melt the butter over medium-low heat. Add the lemon zest
- When the butter melts add the marshmallows and stir until completely melted
- Pour the marshmallow mixture into the cereal
- Mix with a wooden spoon until the cereal is completely coated with the marshmallow
- Spray both sides of a plastic egg with nonstick spray
- Using latex gloves, overstuff a half of an egg with the cereal. Place the other side of the egg and close removing the excess cereal. Open the egg and release the shaped cereal onto parchment paper
- Repeat until all the eggs have been shaped
- Let the eggs set. About 10 minutes

For Glaze
- Pour the powdered sugar into a bowl
- Add the lemon juice and whisk until combined. If the glaze is too thick, add more lemon juice
- With a spoon, gently glaze the eggs
- Let the glaze set for about 5 minutes
- Enjoy!
