Gluten Free Banana Walnut Waffles

Ingredients

  • 1 ½ cups gluten free flour
  • 1 tablespoon sugar
  • 2 teaspoons baking powder
  • ½ teaspoon salt
  • 2 tablespoons fine ground flax seed
  • 6 tablespoons water
  • 1 cup coconut milk
  • 2 tablespoons honey divided
  • 1 teaspoon ground cinnamon
  • 1 tablespoon olive oil
  • ⅓ cup walnuts
  • 2 bananas sliced

Instructions

  1. Combine the flour, sugar, baking powder and salt in a small mixing bowl.
  2. In a large mixing bowl combine the flax seed and water, then add the coconut milk, 1 tablespoon honey, ground cinnamon and olive oil.
  3. Whisk together, then add the flour mixture.
  4. Combine well, then add the walnuts and one sliced banana.
  5. Mash the banana slightly into the mixture.
  6. Spoon the mixture into an oiled waffle iron and cook.
  7. Top with the extra sliced banana, then drizzle with the additional tablespoon of honey.
