Ingredients
- 1 ½ cups gluten free flour
- 1 tablespoon sugar
- 2 teaspoons baking powder
- ½ teaspoon salt
- 2 tablespoons fine ground flax seed
- 6 tablespoons water
- 1 cup coconut milk
- 2 tablespoons honey divided
- 1 teaspoon ground cinnamon
- 1 tablespoon olive oil
- ⅓ cup walnuts
- 2 bananas sliced
Instructions
- Combine the flour, sugar, baking powder and salt in a small mixing bowl.
- In a large mixing bowl combine the flax seed and water, then add the coconut milk, 1 tablespoon honey, ground cinnamon and olive oil.
- Whisk together, then add the flour mixture.
- Combine well, then add the walnuts and one sliced banana.
- Mash the banana slightly into the mixture.
- Spoon the mixture into an oiled waffle iron and cook.
- Top with the extra sliced banana, then drizzle with the additional tablespoon of honey.
