Gluten Free Carrot Date Muffins are dairy free & sugar free. They use honey, dates & olive oil instead of butter or sugar for a healthy, delicious muffin recipe!

Ingredients

  • 1 cup carrot shredded or carrot pulp left after juicing
  • 1 cup dates pitted and chopped
  • 1/4 cup olive oil
  • 1/4 cup honey
  • 2 egg
  • 1 1/2 cups gluten-free flour Premium Gold brand
  • 2 tsp baking powder
  • 1/2 tsp ground cinnamon
  • 1/2 tsp ground nutmeg

Instructions

  1. Preheat oven to 375°F.
  2. Combine the carrots and dates in a small bowl.
  3. Add the olive oil and honey.
  4. Add the eggs and mix everything together well.
  5. In a large bowl combine the flour, baking powder, cinnamon and nutmeg, then add the carrot date mixture to the dry ingredients.
  6. Mix together well.
  7. Spoon the muffin batter into 9 baking cups lined inside a muffin pan.
  8. Place in the oven and bake for 15-20 minutes.
