Gluten Free Carrot Date Muffins
Gluten Free Carrot Date Muffins are dairy free & sugar free. They use honey, dates & olive oil instead of butter or sugar for a healthy, delicious muffin recipe!
Ingredients
- 1 cup carrot shredded or carrot pulp left after juicing
- 1 cup dates pitted and chopped
- 1/4 cup olive oil
- 1/4 cup honey
- 2 egg
- 1 1/2 cups gluten-free flour Premium Gold brand
- 2 tsp baking powder
- 1/2 tsp ground cinnamon
- 1/2 tsp ground nutmeg
Instructions
- Preheat oven to 375°F.
- Combine the carrots and dates in a small bowl.
- Add the olive oil and honey.
- Add the eggs and mix everything together well.
- In a large bowl combine the flour, baking powder, cinnamon and nutmeg, then add the carrot date mixture to the dry ingredients.
- Mix together well.
- Spoon the muffin batter into 9 baking cups lined inside a muffin pan.
- Place in the oven and bake for 15-20 minutes.
