Gluten Free Dairy Free Chocolate Chip Skillet Cookie

Easy to mix in one bowl this Gluten Free Dairy Free Chocolate Chip Skillet Cookie is sweet, tender and loaded with chocolate chips.

Ingredients

  • ½ cup vegan butter I used Earth Balance
  • ¾ cup sugar or coconut sugar
  • 1 flax egg - 1 tablespoon flax meal mixed with 2 ½ tablespoon of water, let set for a few minutes
  • 2 teaspoon Rodelle Baker's Extract or vanilla extract
  • ¾ cup almond flour
  • ½ cup gluten free flour I use Bob's Red Mill 1 to 1 Baking Flour
  • ½ teaspoon gluten free baking soda
  • ½ teaspoon salt
  • 1 cup chocolate chunks I use Enjoy Life for dairy and gluten free

Instructions

  1. Preheat oven to 375 degrees. Place rack in the center of the oven. Spray a 10-inch cast iron skillet with cooking spray.
  2. Put butter and sugar into a stand mixer and beat well until fluffy. Add egg replacer and extract and mix well.
  3. Add almond flour, gluten free all purpose flour, baking soda and salt. Mix well.
  4. Add chocolate chips and stir.
  5. Bake until just cooked through in the middle about 25 minutes. Do not overcook.

Notes

  • I don't recommend substituting other gluten free flours since I have only made this with Bob's Red Mill.
