Gluten Free Irish Cream Chocolate Glazed Donuts

These Irish Cream Chocolate Glazed Donuts are a sweet and delicious breakfast treat, perfect for St Patricks Day and gluten free!

Ingredients

  • 2 cups Premium Gold Gluten Free Flour sifted
  • ¾ cup sugar
  • 2 tsp baking powder
  • ¼ tsp ground nutmeg
  • 1 tsp salt
  • ½ cup coconut milk
  • ¼ cup Irish cream liqueur or non-alcoholic irish cream
  • 2 eggs lightly whisked
  • 2 tbsp butter melted
  • cooking spray
Chocolate Irish Cream Glaze
  • ½ cup semi-sweet chocolate chips
  • 2 tbsp butter
  • 2 tbsp Irish cream liqueur or non-alcoholic irish cream

Instructions

  1. Preheat the oven to 425°F.
  2. Combine the flour, sugar, baking powder, nutmeg and salt in a large bowl.
  3. Add the milk and irish cream.
  4. Add the whisked eggs and melted butter. Combine well.
  5. Coat the donut pan with cooking spray and spoon the mixture into the pan.
  6. Bake for 9-10 minutes.
  7. While the donuts are baking, combine all of the chocolate glaze ingredients in a small bowl.
  8. Microwave on high for 1 minute.
  9. Remove and stir immediately to combine.
  10. Remove the donuts from the oven.
  11. Allow to cool 5-10 minutes, then dip into the glaze.
