Ingredients

  • 1 ¾ cups gluten-free flour If your blend doesn't have xanthan gum, add 1 teaspoon of xanthan gum to the recipe.
  • 1 cup sugar
  • ½ cup brown sugar
  • 1 tablespoon pumpkin pie spice
  • 1 teaspoon baking sode
  • ¼ teaspoon salt
  • 2 eggs
  • 1 15 oz can pumpkin puree
  • ½ cup oil
  • 1 teaspoon vanilla
Oat Topping (optional):
  • ½ cup gluten-free oats
  • ¼ cup brown sugar
  • 1 teaspoon pumpkin pie spice

Instructions

  1. Preheat oven to 375°F. Line muffin tin.
  2. Mix dry ingredients.
  3. In another bowl, whisk eggs, pumpkin, oil, and vanilla.
  4. Combine wet and dry ingredients.
  5. Fill muffin cups.
  6. If making, mix the oat topping in a small bowl. Top each muffin with 1 tablespoon of oat topping.
  7. Transfer muffins to the oven and bake for 20-22 minutes.
  8. Serve immediately
