Gluten free & vegan blueberry lemon waffles
Quick and easy to make large Belgian waffles with blueberries and lemonjuice. Made from just just (glutenfree) oat flour. No need for dairy or eggs, so completely vegan.
Ingredients
- ¾ cups oat flour gluten-free
- ¼ cup coconut flower sugar
- ¼ cup wild blueberries
- 1 lemon juice, and if you like zest
- up to ½ up to ½ cup water
- 2 tsp baking powder corn and aluminum free
Instructions
- Mix the flour with the baking powder and sugar.
- Juice the lemon into a half cup. Fill up with water. So you will use half a cup of fluid in total.
- Mix in the juice/water with the dry ingredients until it forms a thick batter. Set aside to let it go thicken a bit.
- Warm up your waffle maker.
- Add the blueberries to the batter.
- Fill the waffle maker with the batter. Half of the batter will form one large waffle, so you can make two with this recipe.
- Close the lid, you can push it down gently but don't put a lot of pressure on it. There has to be a slight opening to let the steam out and give the batter a change to rise.
- After 7 minutes you can take your waffles out. Use a small wooden spatula to loosen them if necessary.
