Go-To Dough

Go-To Dough is a versatile yeast dough made with all-purpose flour, sugar, yeast, salt, water, milk, and butter. It produces a soft and elastic dough suitable for shaping into dinner rolls or cinnamon rolls. The method uses rapid-rise yeast and includes thorough kneading to develop gluten, resulting in a smooth dough that rests before being portioned for various bread recipes.

Ingredients

  • 5-1/2 to 6-1/2 cups all-purpose flour
  • 3 tablespoons granulated sugar
  • 2 packets yeast 4 ½ teaspoons, Fleischmann's® RapidRise brand
  • 2 teaspoons salt fine sea salt
  • 1-1/2 cups water
  • ½ cup milk
  • 2 tablespoons butter or margarine

  1. Combine 2-1/2 cups flour, sugar, undissolved yeast and salt in large mixer bowl. Heat water, milk and butter until very warm (120°to 130°F).
  2. Gradually add mixture to dry ingredients; beat 2 minutes at medium speed of electric mixer, scraping bowl occasionally. Add 1/2 cup flour; beat 2 minutes at high speed, scraping bowl occasionally.
  3. With spoon, stir in enough remaining flour to make soft dough. Knead on lightly floured surface until smooth and elastic, about 8 to 10 minutes.
  4. Cover and let dough rest 10 minutes. Divide dough in half to use for Dinner Rolls and Frosted Cinnamon Rolls.

Notes

  • This recipe makes two batches of dough suitable for various uses.
  • If you don't have a thermometer, ensure the water feels very warm, around 120° to 130°F.
  • Knead the dough by folding, pushing with the heels of your hands, then turning, repeating until the dough is smooth and elastic.
  • Use light flour dusting on hands and surface to prevent sticking while kneading.
