Grain-Free Almond Flour Waffles

Ingredients

  • 1-1/2 cups almond flour
  • 1/4 cup tapioca flour
  • 1/4 teaspoon baking soda
  • 1/2 teaspoon ground cinnamon optional
  • Pinch sea salt
  • 3 eggs
  • 1/3 cup unsweetened almond milk
  • 3 tablespoons coconut oil melted and cooled
  • 2 tablespoons honey or pure maple syrup
  • 1/2 teaspoon pure vanilla extract
For Topping
  • Strawberry Chia Seed Jam
  • Coconut whipped cream
  • hemp hearts
  • honey

Instructions

  1. Add the ingredients for the waffles to a blender and blend until smooth. Allow batter to sit 5 minutes. Plug in your waffle iron and lightly spray with cooking oil.
  2. Once the waffle iron is hot, pour batter in the center and cover with the lid. Allow waffles to cook a little longer past the green light of the waffle iron, about 3 minutes (to 5 minutes for crunchy waffles). Repeat for remaining batter.
  3. Top waffles with coconut whipped cream (or yogurt!), homemade jam, fresh chopped fruit, hemp hearts, and/or almond butter. Get wild!
