Granita
Granita is a refreshing frozen dessert made by pureeing fruit with lime juice, sugar, and a pinch of salt, then freezing the mixture to a flaky, icy texture. The process involves repeated scraping, which breaks up the ice crystals, resulting in a light and textured treat. You can use a variety of fruits, such as peaches, strawberries, or watermelon, each lending a different thickness and sweetness to the final product. A garnish of fresh minced mint adds a bright herbal note to the dessert.
Ingredients
- 4 cups Fruit cubed, such as peaches, strawberries, or watermelon (about 1 1/2 pounds, see note 1)
- 1/4 cup lime juice (see note 2)
- 1/4 cup granulated sugar
- 1/8 teaspoon salt
- mint minced, for garnish, fresh
Instructions
- To a blender or a food processor, add cubed fruit, lime juice, sugar, and salt. Blend until smooth.
- Transfer to a 9-inch by 13-inch baking dish. Freeze until slushy, about 30 minutes.
- Remove granita from freezer and scrape with a fork. Return to freezer until edges begin to freeze, about 30 minutes more. Repeat every 30 minutes until mixture is frozen and flaky in texture, about 4 hours total.
- Scoop into bowls, garnish with mint and serve.
Notes
- If the fruit puree is too thick, add water to adjust the consistency before freezing.
- Lime juice can be substituted with lemon juice, orange juice, wine, or liquor for different flavor notes.
- This recipe yields about 6 cups, serving 8 portions of approximately 3/4 cup or 6 portions of 1 cup.
- Granita can be stored in the freezer for up to one week; scrape with a fork before serving to restore texture.
