Grapefruit Mimosas (grapefruit juice cocktails for brunch)

Switch up the standard mimosa - these ruby thyme spritzers are perfect with a holiday brunch or celebration!

Ingredients

FOR HONEY THYME SIMPLE SYRUP:
  • ½ cup honey
  • ½ cup water
  • 5-6 prigs fresh thyme
FOR THE GRAPEFRUIT JUICE COCKTAILS:
  • ½ ounce honey simple syrup or honey thyme simple syrup variation shown above
  • 2 ounces pink grapefruit juice without pulp, well chilled
  • 2 ounces chilled champagne or sparkling wine, prosecco or cava
  • fresh thyme leaves for garnish
  • thin wedge of grapefruit for garnish

Instructions

FOR THE HONEY-THYME SIMPLE SYRUP:
    Cup of Yum
  1. In a small saucepan combine the honey and water.
  2. Bring to a low simmer over medium low heat, stirring constantly until the honey dissolves into the liquid. Add the thyme leaves and set aside to steep for 30 minutes.
  3. Strain the simple syrup, through a mesh strainer to catch any thyme leaves or detritus. Cover and refrigerate the honey syrup until cold.
FOR EACH GRAPEFRUIT MIMOSA:
  1. Add the honey-thyme simple syrup to a coupe glass (or champagne flute.
  2. Add the pink grapefruit juice and stir to combine. Top with chilled champagne.
  3. Garnish with fresh thyme stem and a thin wedge of grapefruit. Serve.

Notes

  • I used 1 tablespoon of the simple syrup, but if you prefer a sweeter cocktail, add two tablespoons.
