Grapefruit Smoothie
This Grapefruit Smoothie combines fresh red grapefruit segments and juice with frozen pineapple chunks, Greek yogurt, coconut oil, and fresh ginger for a refreshing and tangy drink. The creamy yogurt balances acidity while ginger adds a subtle warmth. It can be served thick in a glass or bowl topped with grapefruit segments, granola, and berries for added texture.
Ingredients
- 1 red grapefruit I used Winter Sweetz
- 2 cups pineapple frozen chunks
- ⅓ cup Greek yogurt full-fat
- 1 Tablespoon coconut oil
- ¼ inch fresh ginger knob of
- grapefruit berries and granola, segments; for topping
Instructions
- Segment grapefruit over a bowl so you can collect all the juice. Set 2-3 segments aside for topping.
- Add grapefruit segments, grapefruit juice, frozen pineapple, Greek yogurt, coconut oil and fresh ginger into a high speed blender and blend until smooth.
- If smoothie is too thick you can add a little non-dairy milk.
- Pour into two glasses and enjoy. Or serve in a bowl with your favorite toppings — grapefruit segments, granola, berries, etc.
Notes
- Use non-dairy yogurt to make the smoothie dairy-free if preferred.
- Add small amounts of non-dairy milk to adjust thickness after blending.
- For topping, reserve some fresh grapefruit segments and add granola or berries for texture contrast.
