Grasshopper Cupcakes
Rich chocolate cupcakes topped with a creamy Mint whipped cream frosting . So light, so refreshing, Grasshopper Cupcakes are the perfect after dinner treat!
Ingredients
- 12 chocolate cupcake
- 1 cup heavy cream
- ½ cup powdered sugar
- ½ teaspoon mint extract
- 3 drops green food coloring
- 2 Tablespoons chocolate syrup garnish
- 6 chocolate mint candy Andes brand
Instructions
- In a large mixing bowl, beat heavy cream with a whisk (attached to a stand mixer or a handheld electric mixer) for 2-3 minutes until thickened. Slowly beat in the powdered sugar, mint extract and green food coloring.
- Beat an additional 2-3 minutes until desired consistency.
- Frost cupcakes, cake or brownie and drizzle with chocolate syrup. Top with mint candies.
Notes
- Tip 32 was used to frost cupcakes in photo above. Recipe will frost 12 cupcakes, one 13x9 pan of brownies or a 2 layer 8 inch cake.
- Use a half batch of my chocolate cupcake recipe (or double the frosting for 24 cupcakes).
