Greek Chicken Bowls

Ingredients

  • 2 cups cooked white rice
  • 2 lbs chicken thighs
  • 2 tbsp Greek seasoning
  • ¼ cup chopped radishes
  • ¼ cup chopped tomatoes
  • ¼ cup chopped red onion
  • ½ cup feta cheese
  • 3 tbsp kalamata olives pitted
  • ¼ cup chopped romaine lettuce
  • ¼ cup hummus
  • ¼ cup Tzatziki sauce
  • Optional: pita bread

Instructions

  1. Season the chicken thighs with Greek seasoning in a bowl or a ziplock bag and leave it at least an hour ideally overnight in the fridge.
  2. Preheat the oven to 400ºF. Place thighs on a baking sheet and bake for 20 minutes, or until the internal temp is 165ºF. Allow the chicken to cool and chop.
  3. Wash and chop veggies.
  4. Put cooked rice at the base in the bowl you are eating out of and then add the rest of the toppings.
  5. Once your bowl is built, enjoy!
