Greek Chicken Marinade

Ingredients

  • 6 tbsp plain or Greek-style yogurt
  • 4 tbsp olive oil
  • 2 tbsp runny honey
  • 2 tbsp minced garlic 
  • 1 ½ tbsp dried oregano
  • ½ tbsp dried thyme
  • 2 tsp red wine vinegar
  • 2 tsp salt
  • Zest of 1 lemon
  • cracked black pepper to taste
  • 2 lb chicken breasts pounded to 3/4 inch thickness or skinless boneless thighs

  1. Combine the yogurt, olive oil, honey, garlic, dried herbs, vinegar, salt, lemon zest and a generous amount of black pepper in a large bowl. Add the chicken pieces and stir until coated. Marinate for at least 2 hours, up to 24 hours.
  2. To cook the chicken, shake off most of the marinade and either grill or cook in a cast iron skillet with a splash of oil or cooking spray for 15 minutes, or until just cooked through. 

Notes

  • Skewers option: If you wish to cube the chicken to make skewers, chicken thighs work best, cubed before marinating.
