Ingredients

  • 1 pound ground chicken
  • 1/2 cup plain breadcrumbs
  • 1 large egg
  • 5 tablespoons finely chopped red onion
  • 2 cloves garlic minced
  • 1/4 cup crumbled Feta cheese
  • 3 tablespoons chopped fresh parsley
  • 2 tablespoons chopped fresh mint
  • 1 teaspoon dried oregano
  • 2 teaspoons lemon zest
  • 1 teaspoon salt
  • 1/2 teaspoon ground black pepper
  • 1 tablespoon olive oil for greasing baking sheet

Instructions

  1. Preheat oven to 400°F.
  2. In a large bowl, mix all of the ingredients except the olive oil until just combined.
  3. Gently coat a baking sheet with olive oil. With your hands or a cookie scoop, shape the mixture into meatballs approximately 1 1/2 inches wide.
  4. Place meatballs on the prepared baking sheet. Bake for 15–20 minutes or until the internal temperature reaches 165°F.
  5. Remove from oven and let rest for a few minutes. Serve warm with your favorite sides.
